We believe that you deserve better out of your fermented products. Off Type Sauce & Spice’s process begins with heirloom and specialty cabbage, peppers, garlic and other vegetables organically grown on farms in Minnesota and Wisconsin. Whether it’s curtido or fermented pepper sauce, our freshly harvested produce is seasonally lacto-fermented, naturally enhancing peak flavors and providing an added boost of probiotic goodness. All of our products are available online and can be shipped anywhere in Minnesota (contact us if outside MN). Additionally, select products can be found Surdyk’s Cheese Shop, Eastside Food Co-op, and more locations TBA!

About Us

WHAT DOES "OFF TYPE" MEAN?

To be off type means to be different, unpredictable - even original. In the farming world, "off type" refers to a seedling or plant that differs in one or more traits from the cultivar it was derived from. Off-type plants may present ancestral traits that are not considered desirable or expected by farmers or consumers, but may still bear delicious fruits. We find this to be an opportunity for exploration, creation, and production.

The varieties of ingredients we use in our ferments and spices are selected for their superb flavors. We often save our seeds. Some of our favorite varieties of peppers and cabbage have important origins and stories of sharing and preservation, and we find these stories invaluable to the preserved foods that we create.

WHO ARE WE?

Off Type LLC was founded by Zachary Binsfeld while working on an organic vegetable farm, but today relies on a collective of farmers and chefs, working from the ground up to get healthy and create local and regional food autonomy. Our work is based on the production of value-added preserved foods, made in an effort to heal our bodies and the planet at the same time. With all that we do, we strive to educate our communities and collaborate with others seeking to build a culture of resilience - in our guts and our minds.
